  4. Meals on tour - Part 2 Lunches & Dinner Lunches are great and can be easy too for salads and sandwiches. Think like "Sweet Tomatoes" salad bar restaurants. Aside from the chopped salad greens, onions, tomatoes and peppers, most everything else is canned or bottled, the dressings, beets, specialty peppers, garbonzo beans, kidney beans, corn, green beans, carrot, broccoli, black olives, green olives, bacon bits. Topped with some different types of cubed fresh cheese. A salad and cup of broth type soup makes a great lunch. Then there is the hot dog. Don't grill. Buy the "Belly Busters". Heat in hot water prior to serving. They'll be plumper and won't over-cook. Serve a hot dog with slices of onion, tomatoes, and lettuce on a bun with some potato salad or baked beans. For a twist add some chili and shredded cheese to the dog and you have homemade Wienerschnitzel. Don't forget that tray of assorted cold cuts and cheeses so the kids can make their own sandwiches on both (Choice of White or Wheat). And of course, Bacon, lettuce and tomato is another old standby. Make each meal different and interesting. This will keep the kids anchored because they will get homesick no matter how much they like the activity. Save your grill or soup pot for the hot meal of the day which will take some time to prepare. Breakfast and lunch should be your biggest meals and that's when the kids need the higher calorie counts because they are more active. Plan daily intake on USDA recommendations of 2,000 calories per day. Still stuck for meal ideas? Just go to your local supermarket and look at the vast selection of frozen food dinners, then make your own fresh copycat of each meal. Go to your local Chinese restaurant and watch them cook. They will prepare giant bowls of cooked food faster than the servers can take orders. If you set up 3 long portable tables covered with tents, you can place the food down the center and the kids can self serve cafeteria style. Your goal is to get the kids fed in less than an hour so they can get back to rehearsal after a short rest. Buy a lot of fresh vegetables to cook along the way. Cut everything in a 1/2" of 3/4" dice and all will cook very quickly in a stir-fry or stew or hearty chowder. Look at the Progresso soup line. You have all of those varieties to choose to duplicate. The equivalent of one of those cans plus 1 cup of raw pasta cooked is almost enough for 2 servings. Buy pasta in bulk. I like the small shells cause they cook fast and their shape captures a little bit of the sauce. Dinner is good for spaghetti and other type of pasta dishes. Don't forget the Pulled Pork or Beef Au Juice sandwiches. Then there is the standard Taco with sides of beans and rice. A chance to use more fresh vegetables (lettuce, tomatoes, onions) and shredded cheese. With some minor adjustments, you can make just about everything except deep fat frying. And yes, you can even make oven baked fries if your equipment includes an oven. You just have to think outside the box and plan a little in advance. Also Arranged and taught brass. Have managed a Wendy's, a Church's Fried Chicken and several pizzeria's. Wanted to volunteer with SCV or BD this year but work schedule got in the way. Now I just go to the shows and watch the kids perform. This will be a long post so I'll try to break it up into sub-sections. Recipes are not as important as proper food handling a storage. You'll want to keep the kids as healthy as possible. I suggest you create a binder and divide it into 5 or 6 sections. Using the links below, pick out the recipes for your tour that you like and you think the kids will like. Run the recipes through the recipe converters listed below. You will not only have a printable recipe for your binder but it will aid you in creating a shopping list to buy from as you travel.
