Haha, we actually ate all the leftovers and it was a HUGE pan.  When I first saw him get out of the car with it I thought "oh boy...drum corps leftovers, we'll never eat all that whatever it is, and we'll end up giving most of it to the chickens" (I didn't know there was chicken in it at first. Regardless, the chickens like chicken :laugh:). But we polished all of it off within a few days, so you know it was pretty good.

If it was donated by them, no wonder it was good!  I don't know, I assumed the staff/volunteers made it. I haven't been down to see their digs in New Haven.

Meals on tour - Part 1

Hey Dad, Lucky you. You'll have a great time.

A little about me: Marched Jr. with Richmond Hawks, Richmond, CA at Nationals AL 1962 Las Vegas, NV - VFW 1963 Seattle, WA - AL 1965 Portland, OR then Sr. with DCA Yankee Rebels under the late Great Truman Crawford. Also Arranged and taught brass. Have managed a Wendy's, a Church's Fried Chicken and several pizzeria's. Wanted to volunteer with SCV or BD this year but work schedule got in the way. Now I just go to the shows and watch the kids perform.

This will be a long post so I'll try to break it up into sub-sections.

Recipes are not as important as proper food handling a storage. You'll want to keep the kids as healthy as possible. I suggest you create a binder and divide it into 5 or 6 sections.

Using the links below, pick out the recipes for your tour that you like and you think the kids will like. Run the recipes through the recipe converters listed below. You will not only have a printable recipe for your binder but it will aid you in creating a shopping list to buy from as you travel. Make a section for, Breakfast, Lunch, Dinner, Snacks, Drinks and Specialties.

Kaiser Hospital Pharmacies sells a pocket book used by diabetic patients for around $9.00. It gives you a really good reference for calorie counts and carbs in designing a tour meal guide. You did not mention what equipment your organization has so I'll just start from scratch and you can choose what you want to add.

Regarding food, keep the hot foods hot and the cold foods cold. When serving hot foods you can use portable heat lamps run from a small generator from Harbor Freight and cold foods in large bowls nestled in beds of crushed ice. Water is a big issue when traveling. Just the minor differences from the different municipal suppliers can be enough to create HAVOC. Maybe consider buying 5 or 6 or more of those 5 gal. bottles which you'll have to fill daily. Buy as much pre-packaged, canned, bottled food as possible and plenty of juice in many varieties. A 64oz. bottle (Duffy Mott, Ocean Spray, Treetop) yields about 8 glasses per bottle available in Apple, Orange, Grape, Cranberry etc. For those long days on the field in the hot sun, Some ice water with just a hint of lemon will keep the kids refreshed and hydrated. Buy cases of fresh fruit in many varieties. It travels well in it's perfect packaging (the skin) and it's healthy. Every meal should contain some kind of fruit. Also, as the food crew travels, you can do a lot of pre-set up and portion control to speed of serving. Like for breakfast, make up coffee cups filled with instant oatmeal. All the kids need then is some boiling water in their cup, a spoon, a glass of juice and piece of fruit and VOILA - Instant breakfast. Think like what the hotels serve as their complimentary breakfasts for guests. Another recipe that I'm fond of is the coffee cake recipe on the back of the Bisquick box. It makes an inexpensive tasty crumb type of coffee cake with Bisquick, sugar and cinnamon. The old standby is pancakes with syrup, sausages and juice and fruit. And course, the standard is the boxed individual portions of the kid's favorite cereals, with some pre-made powdered dry milk and fresh fruit.

Meals on tour - Part 2 Lunches & Dinner

Lunches are great and can be easy too for salads and sandwiches. Think like "Sweet Tomatoes" salad bar restaurants. Aside from the chopped salad greens, onions, tomatoes and peppers, most everything else is canned or bottled, the dressings, beets, specialty peppers, garbonzo beans, kidney beans, corn, green beans, carrot, broccoli, black olives, green olives, bacon bits. Topped with some different types of cubed fresh cheese. A salad and cup of broth type soup makes a great lunch. Then there is the hot dog. Don't grill. Buy the "Belly Busters". Heat in hot water prior to serving. They'll be plumper and won't over-cook. Serve a hot dog with slices of onion, tomatoes, and lettuce on a bun with some potato salad or baked beans. For a twist add some chili and shredded cheese to the dog and you have homemade Wienerschnitzel. Don't forget that tray of assorted cold cuts and cheeses so the kids can make their own sandwiches on both (Choice of White or Wheat). And of course, Bacon, lettuce and tomato is another old standby.  Make each meal different and interesting. This will keep the kids anchored because they will get homesick no matter how much they like the activity.

Save your grill or soup pot for the hot meal of the day which will take some time to prepare. Breakfast and lunch should be your biggest meals and that's when the kids need the higher calorie counts because they are more active. Plan daily intake on USDA recommendations of 2,000 calories per day. Still stuck for meal ideas? Just go to your local supermarket and look at the vast selection of frozen food dinners, then make your own fresh copycat of each meal. Go to your local Chinese restaurant and watch them cook. They will prepare giant bowls of cooked food faster than the servers can take orders.

If you set up 3 long portable tables covered with tents, you can place the food down the center and the kids can self serve cafeteria style. Your goal is to get the kids fed in less than an hour so they can get back to rehearsal after a short rest. Buy a lot of fresh vegetables to cook along the way. Cut everything in a 1/2" of 3/4" dice and all will cook very quickly in a stir-fry or stew or hearty chowder. Look at the Progresso soup line. You have all of those varieties to choose to duplicate. The equivalent of one of those cans plus 1 cup of raw pasta cooked is almost enough for 2 servings. Buy pasta in bulk. I like the small shells cause they cook fast and their shape captures a little bit of the sauce. Dinner is good for spaghetti and other type of pasta dishes. Don't forget the Pulled Pork or Beef Au Juice sandwiches. Then there is the standard Taco with sides of beans and rice. A chance to use more fresh vegetables (lettuce, tomatoes, onions) and shredded cheese. With some minor adjustments, you can make just about everything except deep fat frying. And yes, you can even make oven baked fries if your equipment includes an oven. You just have to think outside the box and plan a little in advance. It's kind of like being in the military in rough conditions with a minimum of equipment.

This is the type of info I was looking for!! 😄

Frame of reference - Small Open Class group, relatively new and still building. My kid could have gone elsewhere (read: WC) but chose to go back because of the family vibe and camaraderie of the members. Kid has another year before age out and this choice kept them close to me. (#firstbornchild) 

Since the group so new, we have a bit of a guerrilla set up*. We are fortunate that our kids rehearse in a beautiful facility where we have been given access to a small snack bar with refrigeration, sinks and lots of counter space, but we're working mostly out of crockpots, a flat top grill. We shop fresh daily, so there isnt much a temp holding issue. Buy, make, serve. A couple of us have food handlers licenses, so believe me... the temps are regulated. LOL Can't play a horn if you're curled up in a corner from food poisoning, so we're all over the holding temps. *shrug*  The tour is small, but in the past we made it work. A little effort and ingenuity can go a long, long way.  

We have a good handful of tried and true recipes, but I wanted to add the mix. I love the idea of the binder... I have my next project! A few examples of what we have done: pizza, w/ loaded garden salad; teriyaki bowls w/ rice (opt - chicken or tofu); chicken tacos w/ all the expected stuffing and side dishes; meatball subs w/ side salad;  spinach pasta (you know, fresh spinach and bowtie pasta) salad w/chicken; roasted chicken, baked beans and potato salad;  - Then, we set boxes or platters of fresh fruit (bananas, oranges, berries, melons, etc.) at the end of the chow line. We don't make the fresh fruit an option. LOL "You... trumpet 3 - take one." *throws orange at snare kid*

Fresh water, gatorade, fruits and PBJ table are always available at every meal (right now, just lunches and dinners with their schedule - it's not a move in corps). We also have vegetarian and gluten free options available with every meal as we have several kids with dietary restrictions/allergies. It's a moving target, but we're figuring it out. 😄 

We have used the hell out of www.ellenskitchen.com/bigpots and www.allrecipes.com - I love a good recipe calculator. 

Im going to print out your posts and go over them to sort and really digest the info. My hope is to be able to take this year and set up the group for success in a way that is manageable and easy to follow for future volunteers.
